Blueberry and caramelized banana porridge
Happy Valentine’s day to all who celebrate it and… to all who don’t. It would be customary to post something exceedingly romantic on this day, but I believe there is already so much choice, generally including oozing chocolate treats and other marvels, so instead, here’s a very unromantic (I don’t think porridge classifies as a romantic dish by any standards), but a healthy way to kick off morning.
I’ve already written about all the benefit of eating oats in previous porridge recipes including chocolate and black sesame.
Porridge itself doesn’t have much taste, it’s actually the very definition of bland, and required spices, fruit and berries to kick it up and make it interesting. Blueberries and bananas work really well together (my current favourite), especially when bananas have been quickly caramelized with honey and cinnamon, resulting in warm and flavourful breakfast.
- ½ cup oats (60 grams), you can also use quick oats
- 1 ½ cup milk of your choice: dairy, soy or nut (or 1 cup milk and ½ cup of water)
- 2 bananas
- 1 teaspoon cinnamon
- 2 teaspoons honey
- 1 teaspoon vanilla extract
- 125 grams blueberries (fresh or frozen)
- Check the package instructions for cooking your oats, mine usually need a 10 minute soaking and another 15 minute cooking.
- Note: using quick oats you may need less milk, probably 1 cup will be enough.
- Turn on your oven grill on the highest setting.
- Pour 1 cup of milk over oats and let them steep, if need.
- Slice bananas in half and top with 1 teaspoon honey and cinnamon, then place under hot grill for 5-10 minutes.
- Once the oats have soaked, add vanilla extract and cook stirring frequently. If the porridge becomes to dry, add more milk or water.
- Once cooked stir in blueberries and let them warm up for 1-2 minutes, then stir in a teaspoon of honey.
- Divide between two bowls and top with caramelized bananas. Serve immediately.

Another porridge that looks so intriguing and appetising, I am almost tempted to prepare it (for tea though; I still need savoury food for breakfast). You have made me realise I don’t cook frozen fruits often enough. Some taste even better than fresh because they are frozen straight from the field! It’s a wonderful idea to combine blueberries and bananas.

Gourmantine, your idea to carmelize the bananas is spectacular. It just goes to show that you can add a “flavor kick” to breakfast in the amount of time it takes to prepare the rest. No more bland breakfasts!

I love the combination of banana and blueberries and have just made grain-free muffins with them both. The bananas add the sweetness and the blueberries a little tartness so sugar is not necessary, though a spoonful of honey never goes amiss.

For those of us who love porridge….this is very romantic! And I, too, love blueberries and bananas together! Especially when those bananas are caramelized with cinnamon! A perfect start to my day!
I always thought the main reason porridge has earned it’s name for being unattractive/unromantic is the name itself. I mean, there are far better sounding words than “porridge”.
We always have bananas in the house, and just got a big container of blueberries that were on sale. And of course we have oatmeal, too. Guess there’s no excuse not to make this, is there?

Hi Uju, I use all sorts of oats: rolled (used in this recipe), steel cut, but also spelt, barley and etc. All work well in all porridge recipe. Cheers!

How many carbohydrates does this recipe have? Type 2 diabetics should have no more than 45 Carbohydrates at a meal. Will this work? I suppose that I could use only one banana for the 2 portions, then half the honey would work also..

Hi Elizabeth, I am afraid I’m not qualified to give advice here, as I’ve never calculated carbohydrates, I’m very sorry. The only thing I can say is that the recipe would work just as fine by cutting down banana and honey. Good luck.
Thanks for the quick reply. I have pinned a few of your recipes and will have to convert all to American measures. It is too bad that we do not all use the same measurements. It snowed enough in Massachusetts last night that we have ‘no school’ today so I have time to check out recipes on the computer.
