If you’ve seen some of my messages popping out on facebook, you probably know that we’re having a big, fat and juicy cooking – photo shooting weekend ahead, which means that I’m deeply in notes, recipes and all the preparation activities, that come on the back of a cooking weekend.
Hence today, a very quick note on even a quicker recipe. This is my little take on the classical melon and ham, with a tangy lemon-mint vinaigrette.
Prep time: 15 minutes
1 lemon juice
A handful of mint leaves finely chopped
1 tablespoon of olive oil
Process: Mix all the ingredients for the vinaigrette and set aside.
Using a melon scoop, cut out melon balls and dip them into the vinaigrette. Then fold 1 or 1/2 piece of Parma on a wooden skewer, top with a melon. Serve the ham and melon pops in little shot glass. Enjoy!
